INGREDIENTS:


• 6 cups frozen, shredded hash brown potatoes
• 1 1/2 cups shredded Jalapeno Monterey Jack Cheese (can sub cheddar or Swiss)
• 2 cups diced, cooked ham (or Canadian bacon)
• 1/2 cup sliced green onions
• 8 large eggs, beaten (or 2 cups egg substitute)
• 2 12-ounce cans evaporated milk (can use whole, 2% or fat free)
• 1/4 teaspoon salt
• 1/4 teaspoon ground pepper

INSTRUCTIONS:
1. Grease a 3-quart rectangular baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onion. In a large mixing bowl, combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture in dish.

2. At this point, you can cover and refrigerate until ready to bake (several hours or overnight). When ready to bake, preheat oven to 350°F. Bake, uncovered, for 45 to 55 minutes or until center appears set. Let stand for 5 minutes before serving. If baking after casserole has been chilled, you will need to increase baking time to 55 to 60 minutes

INGREDIENTS:


  • 2 pounds ground beef , preferably pasture-raised
  • 3 small onions , diced, or 2 large (OR less, for stricter Keto, depending on personal preference)
  • 1 cup water , filtered
  • 14 ounces (or about 1-1/2 cups) red salsa , fresh pico de gallo or jarred (homemade or store-bought)
  • 8 ounces cheese , grated (aged cheddar)
  • 8 ounces whole green chilies , canned, cut along one line and opened so they can be splayed
  • 8 ounces diced green chilies , canned
  • 1 7-ounce jar tomato paste
  • 2 teaspoons sea salt
  • 2 Tablespoons psyllium husk powder (NOT husks, see link below); for Paleo version use 2/3 cup cassava flour; for GAPS version/Keto variation use 1/3 cup coconut flour
  • 1 Tablespoon apple cider vinegar or 1 teaspoon cream of tartar
  • 2 teaspoons dried oregano
  • 2 teaspoons cumin
  • 1 teaspoon baking soda , sifted
  • fresh cilantro , minced, for garnish
  • freshly ground pepper to taste


INSTRUCTIONS:


  1. Preheat oven to 375 degrees Fahrenheit. Grease a large casserole dish, like a 9" by 13".
  2. In medium size bowl combine salsa, tomato paste and cumin, stirring well. Measure out 1 cup. Set aside.
  3. Combine in small bowl: psyllium husk powder, baking soda and optional cream of tartar. Set aside.
  4. In large mixing bowl add the following: beef, water, the 1 cup portion of thickened salsa, onions, diced green chilies, apple cider vinegar, oregano, sea salt and pepper. Mix well.
  5. Add the psyllium husk powder mixture to the large mixing bowl, and stir well again.
  6. Spread meat mixture into greased casserole. Top with remaining salsa. Lay whole green chilies (spread out) over the surface.
  7. Bake in preheated oven about 45 minutes, until bubbly around edges and slightly puffed all over. Remove from oven.
  8. Top casserole with grated cheese. Return casserole to hot oven for 10 minutes, until cheese is well melted, but not crispy (it should be soft and creamy on top).
  9. Serve with salad, sour cream and olives. Top with fresh cilantro.

  • 1/2 cup beef broth
  • 1/2 cup heavy whìppìng cream
  • 1/2 teaspoon garlìc powder
  • 2 cans green beans, draìned
  • 3/4 cup cheddar cheese
  • 3/4 cup mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Brown ground beef ìn a cast ìron skìllet then draìn the excess grease.
  3. Add cream cheese and stìr untìl melted then add beef broth, heavy whìppìng cream, garlìc powder, and salt/pepper. 
  4. Brìng to a boìl and cook on medìum heat untìl mìxture begìns to thìcken then reduce heat and sìmmer.
  5. Once the ground beef mixture thickens add the two cans of green beans that have been drained on top then sprinkle cheese on top of green beans.
  6. Bake for 25 minutes.

INGREDIENTS

  • 3 boneless skìnless chìcken breasts (cooked and shredded)
  • (2) 15 oz Jars of Alfredo sauce (I really lìke Bertolì brand)
  • 1 cup water
  • 1 Tablespoons mìnced garlìc
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 16 oz penne
  • 3 cups Mozzarella cheese (shredded)
  • 1/4 cup parmesan cheese
  • chopped parsley (optìonal)

INSTRUCTIONS

  1. In a mìxìng bowl, combìne the Alfredo sauce, water, salt, pepper, and mìnced garlìc.
  2. Stìr ìn the penne pasta untìl evenly coated.
  3. Spray a 6 quart crock pot wìth non stìck spray.
  4. Place half the penne and alfredo mìxture ìn the bottom of the crock pot.
  5. Place half the chìcken on top.
  6. Top wìth 1 cup of Mozzarella cheese and an 1/8 cup of parmesan cheese.
  7. Layer the remaining penne mixture, then the remaining chicken, another cup of mozzarella cheese, and the parmesan cheese.
  8. Place the lid on top and cook on low for 2 1/2 to 3 hours.
  9. Remove the lid and top with another cup of mozzarella cheese.
  10. After it melts. Sprinkle with some parsley (optional) and serve.
